1 1/2 tablespoons vegetable oil
1 cup uncooked long-grain rice
2-3 tsp taco seasoning
1/4 cup chopped onion
1/2 cup tomato sauce
2 cups chicken broth
Directions
Heat oil in a large saucepan over medium heat and add rice. Cook, stirring constantly, until puffed and golden.
Stir in onions and cook until tender. Stir in tomato sauce, seasoning and chicken broth; bring to a boil. Reduce heat to low, cover and simmer for 20 to 25 minutes. Fluff with a fork.
Here is a delicious taco seasoning recipe I use:
1 tablespoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon dried oregano
1/2 teaspoon paprika
1 1/2 teaspoons ground cumin
1 teaspoon sea salt
1 teaspoon black pepper
Directions
In a small bowl, mix together chili powder, garlic powder, onion powder, red pepper flakes, oregano, paprika, cumin, salt and pepper. Store in an airtight container.
